The adjective refers to the head-shaped florescense of Allium porrum L., which, according to Hegi (1906,II,290), looks like a billiard-ball". Maybe it is used to distinguish the plant from the cultivated species, which has no umbel (cf. Hegi 1906,II,290, fig.520e).
